The dosage of nutritional fortification substances specified in Standard for the Use of Nutritional Fortification Substances in Foods (GB 14880-2012) refers to the actual amount allowed to be added in the production process, which is determined comprehensively according to the basic principles of risk assessment, taking into account the amount of instinct nutrients in the fortified food, the nutritional status of the population and the food consumption and other factors.

In view of the wide distinction in the amount of various nutrients in different food raw materials, and the attenuation and loss of different nutrients during product production and shelf life are quite different, the actual content of the fortified nutrient in the final product may be higher or lower than the usage amount of the nutrient fortification specified in this standard.

In order to ensure a balanced intake of nutrients for residents, to facilitate nutritional investigation, effective prevention of nutrient intake deficiency and overdose, China issued the General Rules for the Nutrition Labeling of Prepackaged Foods (GB 28050-2011) specifically provides that "for prepackaged foods with nutritional fortification substances, the nutrient content value and the percentage of the nutrient reference value (NRV) in the fortified food shall also be indicated on the nutrition information".

Therefore, the combination of GB 28050-2011 and GB 14880-2012 is not only conducive to the reasonable strengthening of nutrients, but also ensures the accurate information of nutrient content in the final product and consumers' right to know.
